But Walker’s negative perception swiftly changed in 2016, after her first visit to Aldi in decades, when the chain started accepting credit cards, and she found not the dingy floors from her childhood memories but a budget Shangri-La.

Walker’s store in Batavia, renovated in 2017, even got a bakery. As a spruced-up Aldi climbs toward its goal of having 2,500 stores by 2022 — which would make it the third-largest grocer in the nation by store count — converts like Walker are putting aside old perceptions of the brand and embracing the no-frills ethos that allows Aldi to sell quality products for cheap.

“I’m always shocked at what I can get for the cost,” said Walker, 37, an animal trainer who previously did her regular shopping at Walmart, Meijer, Costco and Super Target. “Aldi gets my business first, and then I will fill in holes elsewhere.”.

Squash Casserole with Water Chestnuts and Bell Peppers is a comfort food in our house. Squash, Water Chestnut and Bell Pepper Casserole made with Pecorino Romano Cheese gets everyone to eat vegetables.

Moms in the 1950s and 1960s served casseroles several times a week. Casseroles are designed as make-ahead meals you can pop in the oven when you get home from work.

This Squash Casserole is super tasty. My MIL had a “Casseroles” book.

Each Squash Casserole contains summer squash (yellow crookneck or zucchini squash), along with different combinations of cheese and vegetables. During the summer Don and I belong to Season’s Bounty Farm’s CSA (community-sponsored agriculture) program, we receive an abundance of squash in season.

To make this dish, I took one of the basic casserole recipes and added sliced water chestnuts and diced bell pepper (red is best, but any will do). It is easy to make and very scrumptious.

When I analyzed the nutrition, I found it a little heavy on the fat, so I cut it in half (can you believe it originally had four tablespoons of butter. ) and reduced the amount of mayonnaise the original version called for.

Doing that, however, also cuts the protein from 9 g to 6 g per serving. I used Pecorino Romano cheese in place of Parmesan.

However, Pecorino Romano is a hard goat’s cheese, with a stronger flavor than Parmesan, and I am able to eat it. Can you eat goat’s cheese.

You will need a sauté pan, knife, cutting board, measuring cups and spoons, and a casserole dish. I prefer Pecorino Romano Cheese.
